Led by Ángel León, known worldwide for his commitment to the conservation and management of the ocean through research into new ingredients that reduce fishing pressure and promote sustainable fishing. Located in the Hotel “Palacio de Sancti Petri Gran Meliá” (Chiclana de la Frontera, Cádiz), its gastronomic proposal is based on a cuisine of local products, fresh products of the day and specialties from the sea.
